Up "N" Smoke Cookers is a group of Harris County Deputies and others, who annually contribute our time and talents to charitable cook-offs. The cook-offs are held for various organizations in order to raise money for local youth in Harris and the surrounding Counties.

Barbecues have a long and festive history, George Washington, noted in his diary that he once attended a Barbecue in Alexandria, Virginia, which lasted for three days. While constructing the nation’s capital, the leaders of the new republic hosted a barbecue in celebration of the setting of the corner stone. Barbecues today are held by families all over the United States and are the gathering of choice for these families.

Cook Offs on the other hand, are Barbecues which are multiplied by ten and bring pitmasters together to practice their magic. Pitmasters of today would rival medieval alchemist, who sought to turn base metal to gold, but with much more success. Those of you who know us, know we are indeed pit masters and we have a passion for what we do and our barbecue can only be rivaled by our sponsor appreciation barbecues held the first night of every Cook Off.

In 2004 our team participated in a benefit to raise money for a local girl who was paralyzed, Up "N" Smoke Cookers along with other local citizens, were able to raise $11,000.00 for her special needs. We also participated in two area Cook Offs, the Law enforcement Wild Game Cook Off held in April and the Waller County Fair held in September, which raised money for local FFA, FHA and 4-H scholarship funds.

Since 2004, our team has participated in many charitable benefits. We have been fortunate enough to raise over $65,000 for fallen / injured officers. In total, we have assisted in raising over $100,000 for groups such as:

• Waller County 4 H
• Boy Scouts of America
• Montgomery County Battered Women's Shelter
• Texas Association of First Responders (TAFR)
• 100 Club of Houston

We would like to extend our thanks to our sponsors for their contributions and support in past years and ask for your continued support in the years to come. We are always looking for additional corporate and individual sponsors who are willing to open their heart in helping us with our goal. All contributions gathered are of no personal benefit to any team member and are used entirely in the purchasing of raw materials and entrance fees for the Cook Off’s we attend.
